A quintessential Sri Lankan festive side dish of deep-fried brinjal (eggplant) strips pickled in vinegar, sugar, mustard, green chilies, shallots, and Maldive fish.
Origin
Popularized through the culinary traditions of the Sri Lankan Malay and Dutch Burgher communities, where sweet-and-sour vinegar pickles (moju) became a staple accompaniment to festive rice dishes such as Lamprais and Biriyani.
